Canola and Olive Oil--Would You Really Recommend it?
by Charles Clever, Registered Nurse

Gross enlargement of blood vessels in the calves (varicose veins) caught my attention while examining people in a culture that uses cooking oil deficient in polyunsaturated fats, in this instance, palm oil, which is only 10 % essential oil (see chart below). Never in the United States have I observed such gross hypertrophy, their ankle diameter is enlarged by about 10% from compounded distention of veins.  Yet a gentleman who literally "walks the continents" proved quite the opposite--extremely normal veins and smooth, muscular calves--his diet includes safflower oil which is rich in polyunsaturated fats.   Lacking vehicles, the group with varicose veigns walk much more than we do in the United States, so greater blood pressure exists in their lower extremities. In the U. S., a weak circulatory system generally manifests as bursting veins and arteries in the retina, chest, or brain--called aneurysms, they debilitate and kill.
A healthy circulatory system requires you use quality oils as well as good nutrition.  Researchs at the Loma Linda, California, Veterans Research Center experimented by feeding rats different oils and tested aorta tissue for flexibility and strength. They found that diets emphasizing the polyunsaturated Omega 6 oil  builds superior tissue. When switching to a better nutrient, it usually takes about six months for tissue to rebuild properly; by applying principles of this article, it will decrease the risk of these dangerous conditions.

Problems with Canola Oil

Because canola oil is low in essential oil (you would die without omega-6 oil), I do not recommended it. In addition, cell walls made from canola oil do not metabolize properly because more than one double bond is essential to good health--that is what monounsaturated fat means, canola oil has only one (mono) double bond.  Your cells need many (poly) double bonds from polyunsaturated fats.  For these same reasons, I do not join the poplar clamor over olive oil,  which is also high in monounsaturated fats, but low in the "essential polyunsaturated."
Let's talk about this shortage of "double bonds." Your body constructs tissue with oil's long  molecules. Think of it as if you were looking into two stacked cans of sausages, each sausage representing an oil molecule, and the top and bottom of the cans is your cell's surface--it is called a phospholipid bilayer.  Double bonds have negative charges and similar charges repel each other. With only one double bond, the "sausages" are compressed and this does not allow the cell to properly expel wastes and intake nutrients and oxygen  through osmosis and dialysis. Poor oxygen flow may also increase the chance of that cell becoming cancerous. With more than one double bond, the "sausages" would spread further apart; this means more efficient cell metabolism.
Polyunsaturated omega-6 oil is categorized in the chart below. Its long molecule builds thicker cell membranes, which increases tissue strength and lowers the risk of ruptured blood vessels, varicose veins. aortic aneurysm or cerebral hemorrhage (stroke). Use these quality liquid oils in moderation, and never use the solid shortenings.

Problems With Olive Oil

Safflower, sunflower, corn, and soybean oils, used in liquid form (without saturated fats through "winterization" where available), are the oils of choice--they should be used in moderation. Olive oil's "neutral" monounsaturated fats do not build strong cell walls in your arteries and organs--your body metabolizes it like an animal fat.
Eat more salads, fresh fruits, and complex carbohydrates, like whole grains, legumes and nuts, to get the known phytochemicals that some people imagine, but have never been proven, to exist in olive oil.
Phytochemicals are non-nutrients that assist in biological functions to inhibit disorders like cancer and heart disease. They have been isolated in fruits, garlic, whole grains, legumes, and vegetables like tomatoes and are part of the widely-proclaimed Mediterranean Diet. Until proven otherwise, I cannot recommend monounsaturated fats, like olive oil and canola, over polyunsaturated fat; see the graph below.
Even though they are popular, for almost 20  years I have discouraged the use of olive and canola oils in cooking. Olive oil is a natural laxative, like mineral oil, but for someone on a low-oil diet, essential oils are better. Omega-3 oil is also considered an "essential." It is high in walnuts and the seed of falx and pumpkin, but is not considered here because it rapidly breaks down and looses its benefits during cooking.

In addition to olive oil being deficient in "essentials", recent research suggests olive oil is damaging, similar to animal fats. Artery-constriction measurement is a method to demonstrate that something has injured your arteries endothelium (innermost layer of a vein)--olive oil causes the same reactions as lard, whereas other vegetable oils did not. One expert comments:

Olive oil impaired vascular function just like a Big Mac or fries or Sara Lee cheesecake," says Robert Vogel, MD, head of cardiology at the University of Maryland in Baltimore. He tells WebMD that the study's results "represent a major change in terms of what we should be telling people about what they should eat. Davis, WebMD Medical News (March 14, 2000)
Polyunsaturated oils are essential to life and health because you lack the enzymes necessary for your liver to manufacture them; whereas, monounsaturated and saturated fats can safely be eliminated from your diet.  The following values approximate these two groups.

SAY "NO" TO CANOLA OIL
Compiled by Darleen Bradley

Canola oil from the rape seed, referred to as the Canadian oil because Canada is mainly responsible for it being marketed in the USA.  The Canadian government and industry paid our Federal Food and Drug Administration (FDA). $50 million dollars to have canola oil placed on the (GRAS) List "Generally Recognized As Safe". Thus a new industry was created.

Laws were enacted affecting international trade, commerce, and traditional diets. Studies with lab. animals were disastrous. Rats developed fatty degeneration of heart, kidney, adrenals, and thyroid gland. When canola oil was withdrawn from their diets, the deposits dissolved but scar tissue remained on all vital organs. No studies on humans were made before money was spent to promote Canola oil in the USA.

Adrenoleukodystrophy (ALD) is a rare fatal degenerative disease caused by a build up long-chain fatty acids (c22 to c28) which destroys the myelin (protective sheath )of the nerves. Canola oil is a very long chain fatty acid oil (c22). Those who will defend canola oil say that the Chinese and Indians have used it for centuries with no effect, however it was in an unrefined form.*

My cholesterol level was 150. After a year using Canola oil I tested 260. I switched back to pure olive oil and it has taken 5 years to get it down to 160. Thus began this project to find answers since most doctors will say that Canola oil is O.K.

My sister spilled Canola oil on a piece of fabric, after 5 pre-treatings and harsh washings, the oil spot still showed. She stopped using Canola oil ,wondering what it did to our insides if it could not be removed from cloth easily.

Our Father bred birds, always checking labels to insure there was no rape seed in their food. He said, "The birds will eat it, but they do not live very long."

A friend who worked for only 9 mo. as a quality control taster, at an apple-chip factory where Canola oil was used exclusively for frying, developed numerous health problems including loose teeth; gum disease, gum and nail beds turned gray; numb hands and feet with cramps, swollen arms and legs upon rising in the morning; extreme joint pain especially in hands; cloudy vision; constipation with stools like black marbles; hearing loss; skin tears from being bumped; lack of energy; hair loss; and heart pains.

It has been five years since she has worked there and still has some joint pain, gum disease, and numbness. A fellow worker, about 30 yrs. old who ate very little product, had a routine check up and found that his blood vessels were like those of an 80 year old man. Two employees fed the waste product to baby calves and their hair fell out. After removing the fried apple chips from the diet the hair grew back in.

Be sure to check products for ingredients. If it says, "This product may contain one or more of the following".... and lists Canola oil you can expect it to contain canola oil because it is the cheapest oil and the government subsidizes Canola oil to some industries involved in food processing, bakeries and schools.

My daughter and her girls were telling jokes. Stephany hit her mom's arm with the back of a butter knife in a gesture, "Oh mom" not hard enough to hurt. My daughters arm split open like it was rotten. She called me to ask what could have caused it. I said, "I'll bet anything that you are using Canola oil". Sure enough, there was a big gallon jug in the pantry.

Rape seed oil is a penetrating oil, to be used in light industry, not for human consumption. It contains a toxic substance. (from encyclopedia ) Even after the processing to reduce the erucic acid content, it is still a penetrating oil. We have found that it turns rancid very fast. Also it leaves a residual rancid odor on clothing.  Rape seed oil used for stir-frying in China found to emit cancer causing chemicals. (Rapeseed oil smoke causes lung cancer) Amal Kumar Maj....     Canola oil is a health hazard to use as a cooking oil or salad oil. It is not the healthy oil we thought it was, it is not fit for human consumption, do not eat canola oil, it can hurt you. Polyunsaturated or not, this is a bad oil. Do not use for cooking oil or salad oil, it is not fit for human consumption. It is not a healthy oil at all
